Who would have thought that this would be such an amazing combination? I was pleasantly surprised by how amazing it tasted!

 2 cups zucchini-grated (do not peel)
 2 cups flour
 2 large eggs
 1 tsp baking powder
 ½ tsp salt
 1 tsp cinnamon powder
 ½ tsp ground nutmeg
 ¼ cup unsweetened cocoa powder
 ½ tsp chocolate flavoring (optional)
 1 ½ cups granulated sugar
 ½ cup butter (1 stick), softened
 ½ cup vegetable oil
 1 tbsp vanilla extract
 ¼ tsp almond extract
 ½ cup milk (I used almond milk)
 ½ cup chopped nuts of your choice (I used chopped walnut)
 ½ cup semisweet chocolate chips

1. Preheat oven to 350 degrees F and grease 13*9-inch baking pan with cooking spray and then a spoonful of flour; tapping on the pan in a circular motion until all corners of the baking pan is covered with the flour.
2. In a large bowl combine flour, salt, baking powder, cocoa powder, cinnamon powder and ground nutmeg
3. In a second bowl, combine the eggs, softened butter, oil and granulated sugar
4. Add the milk, vanilla extract, almond extract to the egg mixture
5. Combine the egg mixture and the flour mixture and mix well
6. Stir in grated zucchini and chocolate flavoring (optional)
7. Pour into the greased/floured baking pan, and sprinkle the chopped nuts and semi-sweet chocolate chips on top
8. Bake for 1 hour (over a water bath) or until toothpick inserted into the center of the cake comes out clean.
