sweet potato Pudding
1. Preheat oven to 350 degrees F and grease 9 inch round baking pan
2. Peel and grate sweet potato and yam and place into a large mixing bowl
3. Add the sugar, flour, cinnamon powder, baking powder, nutmeg and salt to the grated potato
5. Add the coconut milk, evaporated milk, vanilla extract, rosewater, and almond extract and mix well.
6. Add browning, brandy and raisins (optional) to the batter
7. Scrape mixture into the greased baking pan and bake for 1- 1.5 hours
Allow to cool before cutting
