Peppered Steak

 1 lb beef strips
Seasoning
 3 stalks thyme
 2 tbsp soy sauce
 ½ bell peppers chopped
 4 cloves garlic, chopped
 ½ tsp salt
 ½ tsp pepper
 2 stalk scallion
 1 scotch bonnet pepper, chopped
Cooking
 3 tbsp vegetable oil
 1 cho cho, peeled and chopped
 3 tbsp Ketchup
 ½ tsp Lowry's seasoned salt
 1 Tomato, chopped
 2 garlic cloves, minced
 ½ bell pepper, chopped
 1 tbsp butter
 2 stalk thyme
 2 tbsp soy sauce
 ½ tsp corn starch
 salt and pepper to taste

1. Wash beef strips with white vinegar.
2. Season with salt, black pepper, thyme, scallion, garlic and soy sauce and allow to marinate overnight.

Cooking:
1. In a large sauce pan, heat 3 tbsp of vegetable oil
2. Pour seasoned beef strips in the saucepan without removing excess seasoning, and cover
3. Allow each side of the beef strips to “brown”, by turning it consistently
4. Add 2 cups of water and cover saucepan
5. Allow beef strips to cook (can take up to 1 hours without the use of a pressure cooker), adding water consistently (where necessary).
6. Steak is cooked when a fork can easily be inserted into the oxtail
7. Add 1 cho cho, peeled and diced. (choc ho can be subsidized with carrot)
8. When the steak and cho cho is almost cooked, add seasoning (bell pepper, scallion, thyme, tomato and garlic) to pot and allow to simmer for 20-30 mins.
9. To make gravy, add soy sauce, butter, lowry’s seasoning, black pepper, salt and ketchup. Perform taste test to your liking.
10. In the final 5 mins of cooking, add ½ tsp of corn starch mixed with 2 tbsp water to thicken gravy.
