Zucchini is often seen as a vegetable that has a very bland taste. Surprisingly, when paired with the right spices and flavors, it can become the centerpiece of any dish.

 1 ½ cups cups of grated zucchini (do not peel)
 ½ tsp baking powder
 ½ tsp salt
 1 ½ cups cup flour
 ½ tsp cinnamon powder
 ½ tsp ground nutmeg
 2 large eggs
 1 cup granulated sugar
  cup vegetable oil
 1 tsp vanilla extract
  tsp almond extract
  tsp rosewater

1. Grease 9-inch loaf pan and preheat oven to 350 degrees F
2. In a large bowl, combine the zucchini, vegetable oil, eggs, granulated sugar and brown sugar.
3. Add the vanilla, almond extract and the rosewater and mix well
4. In a second bowl, combine the flour, salt, baking powder, baking soda, nutmeg and cinnamon powder.
5. Combine the flour mixture with the zucchini mixture
6. Pour the mixture into the greased loaf pan
7. Bake at 350 degrees for 45 mins to 1 hour or until an inserted toothpick in the center of the zucchini bread comes out clean.
