The Cornmeal Pudding is one of Jamaica's favorite; a get together is not complete without it
Instructions:
1. Preheat oven at 400 degrees F and grease 8-inch round baking tin
2. In a medium bowl, combine cornmeal, flour, cinnamon powder, nutmeg and salt
3. Add the 1 ½ cups of water to soften cornmeal mixture
4. In a medium saucepan, heat the coconut milk and add the 2 tbsp grated coconut, sugar, vanilla, rosewater, almond extract and raisins and stir well
5. When the mixture begins to boil, add the cornmeal mixture and stir (over low heat) consistently to avoid lumps
6. Keep stirring for 3-5 minutes or until cornmeal mixture gets thick
7. Pour cornmeal mixture into the greased baking tin.
8. Bake for 45-mins to 1 hour
Topping:
In a small bowl, combine the ¼ cup coconut milk, 2 tsp sugar, 1 tsp vanilla, 2 tsp grated coconut, 2 tsp melted butter. Pour mixture on the top of the pudding the last 15 minutes of baking time.
