Rasta Pasta (with shrimp)

Creamy, spicy and decadent! Pasta with the Jamaica twist...it is simply delicious

Shrimp (seasoned)
 1 lb shrimp (cooked)
 1 tbsp Walkerswood mild jerk seasoning
 1 tbsp Walkerswood hot and spicy jerk seasoning
 1 tbsp Jamaica Choice Jerk bbq sauce
Pasta
 2 ½ cups Penne Pasta
 ½ tsp salt
Rasta Pasta
 4 cloves garlic
 ½ onion, minces
 ½ bell pepper, chopped
 6 mini cherry tomatoes
 ½ tsp lowry's seasoning salt
 1 ¼ cups coconut milk
 1 tbsp Walkerswood mild jerk seasoning
 2 tbsp vegetable oil
 3 stalk thyme
 2 tsp parmesan cheese
 1 tsp butter
 1 tbsp ketchup
1

Shrimp:
1. Clean shrimp and season with jerk seasoning. Allow to marinate for at least 2 hours
2. Put medium skillet to heat with 2 tsp oil
3. Add shrimp and saute for 5 minutes. Then set aside

Pasta:
Cook 2 1/2 cups of penne pasta. Drain and set aside

Rasta Pasta:
1. Put a large saucepan to heat with 2 tbsp of oil
2. Add bell peppers, onion, garlic, tomato and saute for 2 minutes
3. Add the 1tbsp jerk bbq sauce, the 1 tbsp mild jerk seasoning and saute for another 2 minutes
4. Add the coconut milk, thyme,butter, parmesan cheese, ketchup, black pepper and lowry's seasoned salt
5. Perform taste test and add additional ingredient to your liking
6. Add pasta to the jerk sauce and stir
7. Add sauteed shrimp. Cover the sauce pan and allow to simmer for 2 minutes
8. Add parmesan cheese when serving (optional)
