Oven roasted Snapper

 1 large snapper
 ½ cup chocho (chayote) – cut in small cubes
 ½ cup pumpkin – cut into small cubes
 ½ cup okra
 2 tbsp soy sauce
 Vegetable for filling (I used callaloo)
 Salt pepper and garlic to taste
 Butter
 Thyme

Instructions

1. Preheat oven to 350 degrees F
2. After cleaning fish, season with salt, pepper and garlic.
3. Stuff the fish with the callaloo
4. Use aluminum foil to cover a flat baking sheet.
5. Take another large piece of aluminum foil, and place stuffed, seasoned snapper on it.
6. Add the chocho, pumpkin, okra, thyme, soy sauce and butter
7. Cover the snapper with another piece of aluminum foil, securing all edges
8. Place the flat baking sheet with the snapper on it in the oven and bake for 45 mins to 1 hour.
Serve hot
